Designed for commercial kitchens, the Professional Charlie Oven boasts a deeper cooking chamber and heavier construction. It accommodates full-size 1/1 gastronorm pans and includes three heavy-duty stainless steel cooking racks, making it suitable for high-volume cooking.
Begin by building a small pyramid of charcoal over natural firelighters on the grates. Light the firelighters, open both air vents, and close the door. The oven will reach 200–250°C in 15–20 minutes and up to 375–400°C in about 30 minutes.
Once the desired temperature is nearly reached, partially close both vents to maintain it. To increase the temperature, open the vents to allow more airflow. For extended cooking sessions, add more charcoal as needed.
Utilise the nine rack positions to cook different dishes simultaneously. Place items requiring higher heat closer to the charcoal and those needing gentler cooking higher up. This flexibility allows for efficient meal preparation.
The Charlie Oven is designed for minimal maintenance. Ash collects in a dedicated drawer for easy disposal once cooled. Stainless steel racks can be cleaned with a wire brush, and the exterior requires only a sponge and soapy water.
